Or we might keep the ingredient exactly the same and discover what happens when we change the preparation or sauce.
Every Table gives us a different question to explore.

Why Doesn't Everyone Bring the Same Bottle?
Because I am not trying to teach you my bottle.
I am helping you understand yours.
Most wine classes ask everyone to taste the same bottle.
There’s nothing wrong with that.
But it isn’t how most of us experience wine.
We shop at different stores, live in different places, have different budgets—and already have different wines at home.
Depending on the Curious Table we’re exploring, I may suggest a style or characteristic of wine that will make the experiment most useful.
But the point isn’t to match my tasting notes.
It’s to notice what happens in your glass.
Because when you learn to observe the relationship between food and wine, every bottle becomes another opportunity to explore.
Real learning shouldn't depend on my bottle. It should begin with yours.

There's no pressure to have the "right" answer. In fact, the differences between what everyone notices are part of what make the conversation so valuable.

What do you notice about the wine and food—the structure, texture, flavor or intensity?

Then we change something.

Frequently Asked Questions
Do we all need the same wine?
No. Depending on the experiment, I may recommend a particular wine style or characteristic, but you will not usually need one exact bottle. The goal is to observe principles that transfer—not memorize my bottle.
Is this appropriate for a beginner?
Yes. There is no test, blind tasting or expectation that you know wine terminology.
Will experienced wine drinkers get anything from this?
Yes. Experienced drinkers often discover greater freedom to experiment and rethink assumptions they have held for years.

What food will I need?
It depends on the Table. You’ll receive a simple preparation list in advance, using ordinary foods and ingredients that are easy to find.
