Tannin is the drying, slightly bitter, almost chalky sensation across the gums after a sip of certain red wines. It comes from compounds in grape skins, seeds, and stems, extracted during fermentation, and it is the reason a young, structured red can feel harsh when tasted on its own.
Fat softens it, and the mechanism is worth understanding rather than just trusting.
Tannin binds to protein. That is its defining chemical behavior, and it is the same reason tannin is used to tan leather. On the palate, tannin binds to the proteins in saliva, which is what creates that dry, puckering sensation, saliva that would normally coat and lubricate the mouth suddenly cannot. Fat and protein on the plate give those tannin molecules something else to bind to first. The wine’s grip has somewhere to go that is not your palate, and what remains tastes rounder, softer, and more balanced than the same wine tasted alone.

This is why the classic pairings for big, tannic reds are never lean. Barolo wants osso buco, braised short ribs, aged hard cheese, truffle and mushroom risotto, dishes carrying real collagen and fat. A delicate, lean dish leaves the tannin with nothing to bind to but your own palate, and the wine reads as harsher than it actually is.
The same logic explains why a young, aggressively tannic red can seem to soften with age even without food: over years in the bottle, tannin molecules slowly bind to each other and fall out as sediment, achieving on a shelf what a fatty dish achieves in a single bite.
